This new year, I've been on a bit of a health kick. Recently, a friend shared a recipe with me and I'd love to share it with you. So, if you're looking for a healthier way to snack and would like a chip substitute, try these out.
Baby Kale Extra Virgin Olive Oil Salt Pepper
Preheat your oven to 350 degrees. Lightly coat the baby kale with olive oil, place baby kale on cookie sheet in a thin layer, sprinkle with salt and pepper. I like the fresh ground salt and ground pepper. Bake in oven for 12-15 minutes. When finished baking, use a spatula to lift the kale chips off the baking sheet. If you place the spatula at just the right angle, you should be able to get the chips off without them crumbling too much. These are so yummy!!! I'm bound to try other spices instead of salt and pepper though; maybe cayenne or paprika? Sounds delish already! I hope you try this recipe and enjoy it as much as I do.
